The Culture Kitchen is Hopkins Dining's series geared toward celebrating culture and community through cuisine. Each month, a cultural, chef-inspired dish will be featured in Johns Hopkins' retail dining locations for a limited time.
This month's Culture Kitchen will feature an Indian dish originating in Delhi, dal makhani and garlic naan. A relatively modern variation of traditional lentil dishes, it is made with urad dal (black lentils), rajma (red kidney beans), and Indian spices and includes butter and cream.
